Narrative:
Cargo [failed to] include [the weight of a cargo pallet] on our close out [weight manifest].so; about two hours after takeoff we received a new close out with an additional 7;000 lbs of weight from dispatch; [along] with a new fuel burn etc. Our takeoff [numbers] and runway data seemed not to be a factor; however; this was a significant error of gross weight. In addition; the aircraft was on MEL for an inoperative fuel dump system with a takeoff weight restriction. Why did this pallet of weight get missed in the close out? How do we prevent this from recurring?
