Narrative:
This is to highlight an ongoing problem that continues to be a flight safety risk. RNAV arrivals into iah. Originally on the DOOBI2 then assigned the SKNRD1; during the descent we received an off course heading then re-cleared on the arrival to 'descend via'. Shortly after we received no less than 3 or more speed changes with freq. Changes as well. After missing a couple of radio calls and having to tell ATC unable to make some crossing restrictions it got to be too much. It was just nuts. This is no way to operate a safe ATC operation. Other aircraft experienced the same task overload. I wasn't the only one to have called the TRACON.
