At FL360; encountered severe turbulence [with] +/- 500 foot changes in altitude. Cabin supplies and equipment thrown about the cabin. Nothing was painting on the onboard radar at the time of the encounter. Regained control of the aircraft after approximately 30 seconds of severe turbulence. Submitted maintenance write-up for inspection. No defects were noted during post flight.
