Narrative:
While planning our arrival we had our routing and our STAR changed four times. On the second to last change we were cleared to a fix that did not have a crossing restriction for the initial fix; and none until several fixes later; then we were assigned to another arrival with the same initial fix; but with several restrictions. The first officer (first officer) stated that he was preparing for the most restrictive fix; set it and confirmed it and started down; we were soon notified that we descended below the initial restriction and did not need to climb again. There was no traffic conflict.high workload and changing routing and complacency regarding very similar routing with matching fixes but different altitudes. Also not setting the altitude for the nearest fix instead of the most restrictive.if ATC could remind new restrictions when a last minute routing change is made; that would help; but also; just setting the nearest restriction would do it.
