Narrative:
I was flying with my student from to jnx for flight training. My student had the flight controls; and I was PIC. We made 2 inbound traffic position reports on 122.725; the current CTAF frequency for jnx. There was also 2 other aircraft in the pattern talking on the radio; all of us landing and departing runway 03. My student and I entered the left downwind for runway 03 and followed aircraft Z that was on a 5 mile final for runway 03. We made base and final callouts behind aircraft Z. Aircraft Z executed a go-around; as did my student and myself. We remained left closed pattern; and followed the aircraft Z for a second approach; making traffic pattern callouts the entire pattern. Aircraft Z landed on [runway] 03; and started taxiing back on taxiway a; and we performed a full stop landing on the runway shortly thereafter; planning to perform an intersection takeoff from taxiway F (a stop-and-go). As we started to accelerate for take-off; about 5 seconds later; I noticed a plane on short final for runway 21 directly in front of us. I pointed the plane out to my student; took flight controls; and started to slow us down moved to the right edge of runway 03 near the grass. I also made a very loud; deliberate call-out on the radio for the aircraft landing on runway 21 to execute a go-around immediately as we were still on the runway. I noticed the opposing plane (aircraft X) was not responding and was continuing their landing; so I pulled our plane over partly on the grass to avoid them. The cessna; [aircraft X]; saw us once they were on the runway; and immediately locked their brakes and skidded down the runway while staying to the opposite side of the runway from us. They continued skidding past us until they came to a stop behind us a ways down the runway; and exited behind us onto the taxiway. Both aircraft stopped on the ramp; and we approached the other pilot to see if he was ok and to ask what happened. He claimed to be making all his pattern callouts on 122.8; the old CTAF frequency; and was landing runway 21 because the winds were favoring runway 21 (winds had been variable all day; switching favorable runways considerably). I informed him that the frequency recently changed; and he took responsibility for not knowing and was very apologetic.
