Narrative:
Flying with relatively new first officer, he was on company frequency approaching destination, lax. Center assigned 320 KTS when able, maintained speed and entered 12000 ft in altitude preselect, civet inbound. Lost track of altitude and descended below 12000 ft, 4 mi prematurely when switching from center to approach and accepting speed restr of 250 KTS at arnes. Don't know why altitude failed to capture and hold. Must have selected a different pitch command or rate on the flight guidance system. Have always considered the civet arrival challenging -- made more so by the speed assignments and traffic. Will now ensure that both pilots are 'in the loop' during this procedure. Thousand ft calls, flight monitoring, and ATC communication handled by the PNF would have probably prevented this altitude deviation.
