A320 aircraft in cruise encountered mountain wave action. Aircraft accelerated to mach maximum operating and, due to protection modes in the aircraft, it pitched up and climbed 1400 ft before the reporter was able to disconnect the autoplt and descend back to assigned.

Narrative:
Severe mountain wave. Aircraft accelerated to mach maximum operating in just a few seconds and started to climb at up to 1500 FPM. Aircraft is an A320 and was coupled up to autoplt 2 and autothrust. Had to disconnect autoplt to get control and descended back to cruise FL370. Maximum altitude reached was FL383.
