Narrative:
During pushback l-hand start valve would not open. Tpa maintenance opened manually. Discussed procedures with maintenance and determined it could be written up and fixed at dfw. After rereading the MEL in-flight we determined it should have been written up and signed off prior to departure.

Title: MD80S ACFT WITH INOP START VALVE. MAINT OPENED IT MANUALLY AND DEFERRED IT UNTIL NEXT STOP. IT SHOULD HAVE BEEN WRITTEN UP AND SIGNED OFF PRIOR TO FLT.
