Narrative:

Departed ZZZ and passing 15000 ft, flight engineer noticed zero oil quantity. 3 mins later, oil temperature high in yellow arc. Ran appropriate checklists, declared emergency. Shut down engine, returned to ZZZ, and made overweight landing. Callback conversation with reporter revealed the following information: the reporter stated the aircraft was a B727-200 and the engine shutdown was #3 position. The reporter said that prior to departure, the engine oil was svced to full so the concern was the quantity indicator had failed. The reporter stated that when the #3 engine oil temperature went into the yellow caution band the book requires the engine be shut down. The reporter said on approach to landing the oil quantity indicator recovered and indicated a full tank. The reporter said maintenance checked the oil tank and found it full and the aircraft was taken OTS for troubleshooting. The reporter stated the engine had oil pressure even when windmilling. The reporter said that maintenance has not advised the crew of what defective components were found.
