Narrative:

Smelled smoke like that of burnt food. Flight attendant reported smoke throughout the cabin. Donned mask and goggles, declared emergency, diverted to jax. Got clearance direct and for descent. Started the smoke/fumes checklist. Got clearance for visual approach runway 13. Reduced smoke made our decision not to evacuate/evacuation. Emergency vehicles responded, checked the outside of the aircraft, and followed us to the gate. Passenger exited through the jet way. Maintenance idented a defective oven in the forward galley. The only external problem seemed to be the relative difficulty getting clearance to lower altitudes, and what seemed to be the excessive number of radio frequency changes. Perhaps ATC could get the clearance through sectors for an emergency aircraft and keep a single frequency until handoff to tower. Having a flight attendant jump seat rider/more than FAA minimum crew allowed me to remain in constant contact with the crew during the event. Supplemental information from acn 491684: ZJX was the controling agency and initially gave us heading not directly towards the airport and also gave us step-down altitudes of FL260, FL240, and 16000 ft. We emphatically insisted on lower trying to clarify the words 'emergency aircraft.' once we were given a lower descent and cleared to jax, everything went smoothly. This aircraft was just parked from the maintenance hangar to the gate. A 2-PERSON cockpit keeps both pilots extremely busy.

Title: SMOKE AND FUMES FROM GALLEY OVENS RESULT IN AN EMER DECLARATION AND DIVERSION TO JAX, FL. THERE WAS SOME DIFFICULTY WITH ATC SVC.

SUPPLEMENTAL INFO FROM ACN 491684: ZJX WAS THE CTLING AGENCY AND INITIALLY GAVE US HDG NOT DIRECTLY TOWARDS THE ARPT AND ALSO GAVE US STEP-DOWN ALTS OF FL260, FL240, AND 16000 FT. WE EMPHATICALLY INSISTED ON LOWER TRYING TO CLARIFY THE WORDS 'EMER ACFT.' ONCE WE WERE GIVEN A LOWER DSCNT AND CLRED TO JAX, EVERYTHING WENT SMOOTHLY. THIS ACFT WAS JUST PARKED FROM THE MAINT HANGAR TO THE GATE. A 2-PERSON COCKPIT KEEPS BOTH PLTS EXTREMELY BUSY.
