Narrative:

Changed equipment from B767-300ER to B757. Flight delayed. 10 mins prior to departure, human organs arrives at aircraft. Now flight is lifeguard category. We checked flight manual part 1 for all necessary information, and notified dispatch. After being handed off to ZHU, we were offered an expedited handling, and accepted clearance present position direct mia. I notified dispatch of the route change. Mins later, ATC amended clearance and advised we had to be returned to part of our original routing due to active MOA's. They amended route to go to nepta, and J58 to CYY3 arrival. Advised dispatch. Then north of hrv, encountered WX, and checked with ATC for ride reports. Climbed to FL370 only to find moderate turbulence. After encounter with turbulence, I notified dispatch of turbulence and then received the note from dispatch reminding us that we were not in an aircraft that was overwater equipped. We advised ATC (ZJX) and we were then cleared direct to cew and along the west coast to the C663 arrival. We reached a point further than 50 mi offshore. Our turn back to mainland was about 45 DME south of sedan along J58. Too many distrs, and forgot we had changed to non overwater aircraft.
