Narrative:

Departing las runway 25R, pre departure clearance indicated mead 2, maintain 7000 ft, expect 15000 ft 2 mins after departure. Approximately 5 mins later, crossing 280 degree radial at 7000 ft on autoplt, PNF selected 9000 ft on altitude command. Aircraft climbed above 7000 ft before departure control cleared us to 15000 ft, on course. Previous experience at this airport led crew to expect higher altitude before crossing 280 degree radial. A better course of action would have been to level at 7000 ft and discuss why PNF thought we were cleared to 9000 ft. Supplemental information from acn 515861: on takeoff we got an ECAM warning of an engine overtemp. We were flying the SID on navigation in close visual contact with preceding aircraft. We had visual traffic called out to us just as we leveled off. I, as PNF, briefly looked down and saw a 9000, at or above restr, which actually applied to a different runway's restr. I was thinking it was a clearance up to that altitude, so I dialed it into the altitude select window. The first officer questioned that, but was used to the normal clearance to 15000 ft as soon as we got to departure control. In the confusion of the moment, I forgot the original clearance to 7000 ft. Departure control said nothing and may not have even noticed we were climbing. To me the biggest problem was the multiple number of restrs from several runways on one commercial chart page.
