B737-300 captain aborted takeoff due to uncontrollable pitch change during the takeoff roll which indicated that the center of gravity was exceeding the aft limits. Passenger seating was readjusted to bring the aircraft within center of gravity limits.

Narrative:
I (the captain) delegated weight and balance form to be filled out by first officer. He changed loading on form to bring paperwork into center of gravity limits and did not tell me. Actual load for passenger did not match form. On takeoff, nose started rising at 90 KTS and I aborted takeoff. We had an aft center of gravity. First officer told me what he had done, and I had flight attendants move passenger to match weight and balance form.
