Narrative:
With autoplt engaged at FL310 and deviating around buildups, I reached up to select winds on the IRS display, and may have inadvertently tapped on the left rudder as I extended my reach. At that time, the autoplt disengaged and the aircraft climbed and entered into approximately 40 degree right bank. The captain regained control of the aircraft. 3 flight attendants working at the rear of the aircraft were injured.
