Narrative:

After departing koa on a B757, we diverted into hnl due to an engine related EICAS. When maintenance could not clear the malfunction, an equipment substitution was made to a B767-300. Due to cockpit crew duty limits, all efforts to get the door closed 'in time' were made by the station. The aircraft initially was not catered with any provisions, and the captain made it clear we would not depart without, at least, cups for water. Station personnel came on at the last min with boxes of provisions (we were very busy in the cockpit, and neither crew member actually went back to see what was actually boarded). The 'a' flight attendant announced she was now satisfied with the provisions boarded, and the door was closed. In-flight, about 2 hours out of hnl, a crew break was requested. The flight attendant informed us for the first time that there were no galley carts on board. Improvisation was required for crew breaks. Neither pilot considered the lack of galley cart to be of any real significance, other than for security reasons. Ferry flts often depart without galley carts, so this confign was not unknown to us. If galley carts are, part of weight and balance, then one questions whether our weight manifest was accurate? On ferry flts, is the weight manifest accurate? If galley carts are not part of the weight and balance, then this report is merely to note the deviation from normal security practices.

Title: B767-300 PLT QUESTIONS ACCURACY OF WT MANIFEST ON A FERRY FLT DEPARTING HNL WITH NO GALLEY CARTS.
