Narrative:
While on the texnn STAR into hou; we had just started to level at FL210 when just before altitude acquire we were given a clearance to descend and cross the coach intersection at 11000 ft. The first officer selected 11000 ft in the altitude window before leveling at FL210. Leveloff was done manually and I then selected the cruise page to change it to FL210 because our flight plan was to climb to FL220. After entering this into the CDU; I selected the descent page and noticed that there was no altitude selected in coach intersection. I immediately started a descent and instructed the first officer to tell ZHU that we will not make the crossing restr at coach. ZHU said this was the third aircraft that had not made this restr in a row. And said 'do the best you can' and he would let approach control know we would be a little high at coach. We asked for a WX deviation prior to reaching coach and was later cleared to jabbs intersection on runway 12R after clear of the WX. Prior to departure; I had entered 11000 ft at coach intersection; but I am not sure when the FMS dropped it out of the legs page!

Title: A B737-300 CREW MISSED A XING RESTR ON TEXNN 3 ARR INTO HOU AFTER A RESTR DROPPED OUT OF THE FMC.
Narrative: WHILE ON THE TEXNN STAR INTO HOU; WE HAD JUST STARTED TO LEVEL AT FL210 WHEN JUST BEFORE ALT ACQUIRE WE WERE GIVEN A CLRNC TO DSND AND CROSS THE COACH INTXN AT 11000 FT. THE FO SELECTED 11000 FT IN THE ALT WINDOW BEFORE LEVELING AT FL210. LEVELOFF WAS DONE MANUALLY AND I THEN SELECTED THE CRUISE PAGE TO CHANGE IT TO FL210 BECAUSE OUR FLT PLAN WAS TO CLB TO FL220. AFTER ENTERING THIS INTO THE CDU; I SELECTED THE DSCNT PAGE AND NOTICED THAT THERE WAS NO ALT SELECTED IN COACH INTXN. I IMMEDIATELY STARTED A DSCNT AND INSTRUCTED THE FO TO TELL ZHU THAT WE WILL NOT MAKE THE XING RESTR AT COACH. ZHU SAID THIS WAS THE THIRD ACFT THAT HAD NOT MADE THIS RESTR IN A ROW. AND SAID 'DO THE BEST YOU CAN' AND HE WOULD LET APCH CTL KNOW WE WOULD BE A LITTLE HIGH AT COACH. WE ASKED FOR A WX DEV PRIOR TO REACHING COACH AND WAS LATER CLRED TO JABBS INTXN ON RWY 12R AFTER CLR OF THE WX. PRIOR TO DEP; I HAD ENTERED 11000 FT AT COACH INTXN; BUT I AM NOT SURE WHEN THE FMS DROPPED IT OUT OF THE LEGS PAGE!
