Narrative:
The crew scheduler paired me with non IOE captain while I was in IOE training. Before we got on board the aircraft; I made casual conversation with the captain about my IOE experience and flight hours. Based on those conversations; I assumed that he understood that I was still in IOE training. During the middle of flight; the captain indicated me that he would not fly with me on the next leg; so I asked him about my IOE paperwork and found out he wasn't the IOE captain. I believe the causes of the problem are scheduling mistakes and the lack of standard crew preflight briefing procedures.
