Narrative:

During climb out of bogota; first officer informed me that we had just done a flaps 1 degree takeoff. I was very surprised and could not understand how we both missed that. We had done the before takeoff checklist and I remember looking at the gauge and even touching the flap handle and saying flaps 5 degrees. We had a long taxi and had to wait for a few mins on the taxiway so there was no rush at all. The takeoff felt a little heavy; but nothing out of the ordinary. I was tired and fell asleep for a while; while waiting to be loaded. The previous night I had a good night sleep; but during the day; I could not get myself to sleep so was up for about 18 hours. I felt fine during the first leg from ZZZ2 to bogota; but it caught up with me while waiting in bogota.
