Narrative:
Cleared to descend via the grnpa 1 arrival; landing runway 25L. Given a heading to fly after crossing luxor. At luxor; runway was changed to 19L; heading was deleted and grnpa 1 resumed. By the time we reached grnpa; we were at 12000 ft and not 11000 ft. Late change of runway. Delete the heading all contributed to us being 1000 feet high. We were on the profile from there on out and ATC never said a thing. We were re-programming the box and wondering about the strange readback of 19L delete the heading and resume the grnpa 1 arrival. By the time I processed all that; we were 8 more miles down line and high.

Title: B737-700 FLT CREW MISSES CROSSING RESTRICTION DURING ARR TO LAS.
Narrative: CLEARED TO DESCEND VIA THE GRNPA 1 ARRIVAL; LANDING RUNWAY 25L. GIVEN A HEADING TO FLY AFTER CROSSING LUXOR. AT LUXOR; RUNWAY WAS CHANGED TO 19L; HEADING WAS DELETED AND GRNPA 1 RESUMED. BY THE TIME WE REACHED GRNPA; WE WERE AT 12000 FT AND NOT 11000 FT. LATE CHANGE OF RUNWAY. DELETE THE HEADING ALL CONTRIBUTED TO US BEING 1000 FEET HIGH. WE WERE ON THE PROFILE FROM THERE ON OUT AND ATC NEVER SAID A THING. WE WERE RE-PROGRAMMING THE BOX AND WONDERING ABOUT THE STRANGE READBACK OF 19L DELETE THE HEADING AND RESUME THE GRNPA 1 ARRIVAL. BY THE TIME I PROCESSED ALL THAT; WE WERE 8 MORE MILES DOWN LINE AND HIGH.
