Narrative:

The day before our sequence our aircraft was placed on numerous mels pertaining to the autopilot and speed trim systems. The procedural requirements for one of these were not properly completed by maintenance. Upon arrival at an intermediate stop I conferred with maintenance and found the discrepancy. Maintenance then complied with the MEL requirements and we continued. This MEL does not allow flight crews to see how to deactivate the speed trim system on the -700. It does for the -300/-500. For the -700; it tells you to deactivate and verify that the remaining speed trim system operates normally. As pilots; we have no way of verifying this since we have no access to the maintenance manual.
