Narrative:
During taxi; about 5 minutes after landing; hydraulic one low press caution light came on. Captain went through non-normal checklist. Fluid was empty; but still pressure in lines. They shut down engine one right away. No fluid on ground during walk around once at gate.

Title: A Dispatcher reported that after landing; a CRJ200's Hydraulic One Low Pressure light illuminated; so the crew shut the engine down with pressure remaining; but the reservoir indicating empty.
