Narrative:
On taxi out; engine 1 overheat light illuminated. Consulted the QRH (shut off engine and discharged fire bottle) and returned to gate. For safety declared emergency and equipment followed. Cockpit indications [were] all normal except engine 1 overheat light. Outside reported engine normal as we taxied to gate.

Title: B737-700 Captain reported that engine #1 overheat light illuminated on taxi out. Engine was shut down; fire bottle discharged; and flight returned to gate.
