Narrative:
At the end of trip sequence, 8 hours into an 11 hour, we got an unscheduled aircraft change. The aircraft was turned over to us as having 1 air conditioning pack inoperative and released per MEL procedures. We took off and after leveling off in cruise, found that the maintenance procedures for release under that MEL had not been accomplished. Contacted destination and had the arrange for contract maintenance to meet us and perform MEL main procedure. Lesson: even when toward the end of crew day, even when problem (MEL item) is familiar, even thought departure time is approaching, take time to review MEL and log book to ensure proper procedures are followed.
