Narrative:
I am a new captain with 50 hours total on medium large transport. I had not flown in 12 days. Our assignment was musel 5 departure to intercept santa catalina 084 direct sxc direct lax J5 ehf flight plan route. Due to noise constraints, our takeoff procedure is nonstandard. Maintain V2+10 to 500' reduce power to 1.65 EPR, turn left to 125 degree heading at 1 DME, maintain V2+10 until 3000', clean up, no climb power until 5 DME. Add to this, lots of radio communication and plenty of light aircraft traffic in the vicinity. Being new to the FGS and trying to follow all of the departure requirements, I engaged 'IAS' at the wrong time which kicked off the altitude arm. My scan was slow and I went right on thru 3000'. ATC then cleared us to 10000' and asked our altitude. We reported passing 3 for 10000' (really 4000'). Apparently there was no traffic conflict as ATC passed us to another frequency with no comment. Once level en route, the first officer and I discussed, at length, what happened and how to prevent repeating the same problem. It should not happen again.
