Narrative:

Departed for las and cleared tyssn arrival and expected runway 25L based on winds and ATIS. Approaching igm; las changed to 19 left&right. So we prepped for RNAV visual 19L. La center advised las had another plan for us and assigned a westbound heading. After another hand off we were cleared direct gfs and the kepec arrival. This arrival transitioned us to 25L. We reviewed and prepared for that and finished about the time we were handed over to las approach. On initial contact the controller advised us to expect runway 7R. We reviewed the RNAV visual 7R and the note that said to expect it when las was using landing 7R. We were cleared to 7000 and heading 010. After reporting the airport in sight we were cleared for a visual approach to 7R (not the RNAV). We both had our terrain pb's on and were aware of the terrain in the vicinity. I wanted to establish on the RNAV approach and our heading was putting us directly to jammd so we went direct and began a gradual descent. We received a ground proximity warning 'terrain; pull up' without the caution terrain warning or any terrain visible ahead on the nd; we did display terrain to our west above us. No altitude readout on the radar altimeter during the event.I was too focused on the RNAV visual approach and using it as a barrier for terrain that I missed the terrain right in front of us. I didn't specifically ask for the RNAV. Getting cleared to 7000 was a clue we weren't going to get it. Ask the controllers to clear us automatically for the RNAV visual or at least leave us in a position to fly it.

Title: A321 pilot reported receiving a GPWS terrain warning on a visual approach to LAS Runway 7R.
