Narrative:

At cruise, flight attendants started meal service. Excessive amount of smoke coming from #1 oven - we removed the meals, and discharged a halon fire extinguisher. It appears, that caterers had left wrappings on meal tray. Without prompt action on the part of all involved this incident could have become a serious problem. I believe, that all people involved, caterers and flight attendants, need to be reminded of potential for danger unique to aircraft operations. In addition we have no means other than good cockpit resource management, to notify the cockpit of an emergency in the galley.
