Narrative:
While on authority/authorized break in crew rest seat as part of an augmented trans-oceanic crew, I was alerted by captain of a passenger disturbance in coach cabin. At his request, I observed from distance (business class) while captain confronted passenger. I saw passenger was not conforming and at captain request again I brought flex cuffs and placed them on passenger. After they were on he began resisting. As captain installed seatbelt, passenger attempted to bite captain. After secure I returned to cockpit duties. Captain stayed to talk with passenger's wife. Informed later that passenger escaped cuffs, but burly other passenger provided assistance by calming irrational passenger until landing jfk. Fbi report filed.
