Narrative:
Descended to FL183 vice FL190. I was setting in new altimeter setting of 30.57 when told to level off at FL190. Should not have put new setting in until passing FL180. Attention was not on level off compounded by high altimeter setting.

Title: A B727-200 FREIGHTER CREW DSNDED BELOW THEIR ASSIGNED ALT WHEN THE FO RESETS HIS ALTIMETER FOR STATION PRESSURE THEN LEVELS OFF AT FL183 VERSUS FL190. FLC REALIZED THEIR ERROR AND CORRECTED.
Narrative: DSNDED TO FL183 VICE FL190. I WAS SETTING IN NEW ALTIMETER SETTING OF 30.57 WHEN TOLD TO LEVEL OFF AT FL190. SHOULD NOT HAVE PUT NEW SETTING IN UNTIL PASSING FL180. ATTN WAS NOT ON LEVEL OFF COMPOUNDED BY HIGH ALTIMETER SETTING.
