Narrative:
Missed crossing altitude. At FL370 with pilot's discretion to FL350, received clearance to cross 75 NM southwest of bdf at FL330. I put FL330 in the FMS and armed performance mode but forgot to change altitude window on fcp to FL330. I was demonstrating the performance mode to a new transition captain and failed to note that we had leveled at FL350 instead of FL330 until past the 75 NM fix. We informed ATC and continued down to FL330. I was talking about performance mode when I should have been paying more attention to what it was doing.

Title: MD11 CREW DID NOT MAKE ALT XING RESTR.
Narrative: MISSED XING ALT. AT FL370 WITH PLT'S DISCRETION TO FL350, RECEIVED CLRNC TO CROSS 75 NM SW OF BDF AT FL330. I PUT FL330 IN THE FMS AND ARMED PERFORMANCE MODE BUT FORGOT TO CHANGE ALT WINDOW ON FCP TO FL330.
