Narrative:
Air carrier X (B727) was on my frequency on the cqy arrival to dfw at 11000 ft. About 5 mi from dietz, I issued crossing traffic that was 11 O'clock, 4 mi eastbound at 10000 ft, a B757 (air carrier Y, a departure off dfw). I observed the mode C on the aircraft continuing to climb above 10000 ft. I turned air carrier X immediately to 250 degrees to avoid conflict. After they passed, I turned him back to a normal arrival heading.

Title: APCH CTLR TURNED A B737 DURING DSCNT TO PROVIDE SEPARATION FROM A B757 CLBING THROUGH FROM 1000 FT BELOW.
Narrative: ACR X (B727) WAS ON MY FREQ ON THE CQY ARR TO DFW AT 11000 FT. ABOUT 5 MI FROM DIETZ, I ISSUED XING TFC THAT WAS 11 O'CLOCK, 4 MI EBOUND AT 10000 FT, A B757 (ACR Y, A DEP OFF DFW). I OBSERVED THE MODE C ON THE ACFT CONTINUING TO CLB ABOVE 10000 FT. I TURNED ACR X IMMEDIATELY TO 250 DEGS TO AVOID CONFLICT. AFTER THEY PASSED, I TURNED HIM BACK TO A NORMAL ARR HDG.
