Narrative:
Climbing out of las, encountered moderate turbulence at 26500 ft (wind shift from 216 degrees/18 KTS to 260 degrees/30 KTS). Pitch increased to 13 degrees. Exceeded cleared altitude of 27000 ft. Leveloff at 27000 ft would have resulted in negative G's. Seat belt sign was off and flight attendants were up and about. Leveled at 27700 ft and notified ATC of deviation and turbulence. ATC cleared us to 29000 ft and we continued climb.
