Narrative:
After getting aircraft late and rushing to complete origination preflight, was told that all our catering was captive in truck struck by a B737 under tow and that replacement catering was on the way. I dealt with an armed law enforcement officer and I had an FAA inspector on the jump seat for the leg. After catering arrived, all doors were slammed and we left the gate 1 hour late. I heard flight attendant say that we had no trash containers because they were captive on the damaged truck and no others were available. I did not realize they were required. The flight attendant was very senior and she was not concerned. The FAA inspector was not concerned and the first officer was not concerned. I was concentrating too hard on doing my best for the FAA inspector. Upon arrival at dfw when the flight attendant said that they had not used any of the galley drains because they drained into the trash bins, I looked at the bin doors and saw the placard saying that the bin is required. I learned a lesson and will be more careful in the future not to make assumptions and let myself be distraction when so many unusual things happen at once.
