Narrative:
In our effort to save fuel; we taxied out single engine. We started the second engine after crossing runway 8. This caused us to be rushed in the checklist. Neither one of us noticed that we had inadvertently continued the checklist without having received final weights. This unintentional error caused us to depart without them. Upon reaching our cruise altitude dispatch notified us that we hadn't gotten final weights. In retrospect; I shouldn't have taxied single engine on such a short taxi; causing us to be rushed. Also; in the future; I will have the first officer place the final weights on the console where I can see them; before continuing the checklist.

Title: B737-300 FLT CREW DEP WITHOUT CORRECT WT AND BALANCE NUMBERS.
Narrative: IN OUR EFFORT TO SAVE FUEL; WE TAXIED OUT SINGLE ENGINE. WE STARTED THE SECOND ENGINE AFTER CROSSING RWY 8. THIS CAUSED US TO BE RUSHED IN THE CHECKLIST.
