We noticed egt gauge fluctuating and subsequently exceeding limits. We could not get it back below the red line; shut down the engine; and landed at nearest suitable airport.

Title: B737-500 Flight Crew experiences fluctuating EGT and momentary over temperature approaching cruise attitude. Flight continues with fluctuating EGT but within limits. Sometime later the EGT pegs with the over temperature light on. The engine is shut down and the flight diverts to the nearest suitable airport.
Narrative: We noticed EGT gauge fluctuating and subsequently exceeding limits. We could not get it back below the red line; shut down the engine; and landed at nearest suitable airport.
