Narrative:

I was flying the locke one arrival to san francisco, coaldale transition. The autothrottle and autoplt were turned off so I could handfly the approach. We were cleared to cross locke intersection at 250 KTS and 10000'. For some reason I leveled off at 11000' and stayed at that altitude until crossing locke at which time we were cleared to descend to 9000'. There is a need to handfly an EFIS equipped airplane to maintain your flying skills. However, when so doing, an extra vigilance should be maintained in the cockpit by both the PF and PNF so as to not lose sight of the big picture (i.e. Crossing altitudes, airspds, ect.). There is a widely held contention (I believe) that you will lose your flying skills if flying an EFIS equipped airplane. However, after flying a yr on the ackpt navltl medium large transport and 4 mos on the ackpt display widebody transport I contend that hand flying an EFIS equipped airplane, if done properly and coordinated with the AFDS panel, will actually increase your scan proficiency. This is because there are so many more inputs that need to be crosschecked with your normal airspeed, vsi, altimeter, dg, and attitude indicator. You need to have confidence when to 'fly through' the flight director commands and when to fly them precisely. Practice makes perfect.

THERE IS A NEED TO HANDFLY AN EFIS EQUIPPED AIRPLANE TO MAINTAIN YOUR FLYING SKILLS.
