ATC facility: havana center. Location: north 22.25 west 81.15. Severe turbulence encountered. Conditions: FL310, .78-.8 mach, IMC. Location: north 22.25 west 081.15. Time: XX45 UTC. Duration: 30-60 seconds. Altitude deviation, approximately 200 ft. Bank deviation: approximately 30 degrees. Flight attendants: seated several mins in advance. Cabin: no reported injuries to flight attendants or passenger. 1 passenger reported out of seat, in lavatory. Dispatch notified by radio. Entry made and maintenance personnel briefed. Chief pilot notified, was very glad all flight attendants were seated.
