Narrative:
First officer was flying the aircraft. During climb #1 engine oil temperature climbed into the yellow band. As an intermediate leveloff was required by ATC, thrust was reduced causing the #1 oil temperature to increase into the red band. The thrust was increased to decrease the oil temperature. The company maintenance was called. A return to the departure airport was determined to be the best course of action. The passenger and flight attendant were briefed. An emergency was declared and the engine was shut down as per company procedures. The problem was determined to be the #1 engine was over-svced with engine oil.
