Narrative:
We were climbing to FL290. We had reports of light to moderate chop at FL290 and below. We asked about the rides at FL330, but were told the altitude wasn't available. We were then told to maintain FL270. I was eating and although I normally physically 'touch' the altitude select knob when given a new altitude, this time I did not do so. As we were leveling at FL290, I asked the first officer if we were reclred to FL290. It is at that time we both realized we had not set the new assigned altitude of FL270. Center asked us to verify our altitude. We said level at FL290. Center told an air carrier Y flight to expedite to FL280. The air carrier said he was already at FL280. According to TCASII the nearest flight was the air carrier Y at FL280, at a distance of over 15 mi. Center never indicated a problem. Solution: don't eat in climb.

Title: CAPT OF AN MLG OVERSHOT ALT DURING STEP CLB DUE TO FORGETTING TO PRESELECT ALT IN THE AUTOPLT TO THE NEWLY ASSIGNED ALT.
Narrative: WE WERE CLBING TO FL290. WE HAD RPTS OF LIGHT TO MODERATE CHOP AT FL290 AND BELOW. WE ASKED ABOUT THE RIDES AT FL330, BUT WERE TOLD THE ALT WASN'T AVAILABLE. WE WERE THEN TOLD TO MAINTAIN FL270. I WAS EATING AND ALTHOUGH I NORMALLY PHYSICALLY 'TOUCH' THE ALT SELECT KNOB WHEN GIVEN A NEW ALT, THIS TIME I DID NOT DO SO. AS WE WERE LEVELING AT FL290, I ASKED THE FO IF WE WERE RECLRED TO FL290. IT IS AT THAT TIME WE BOTH REALIZED WE HAD NOT SET THE NEW ASSIGNED ALT OF FL270. CTR ASKED US TO VERIFY OUR ALT. WE SAID LEVEL AT FL290. CTR TOLD AN ACR Y FLT TO EXPEDITE TO FL280. THE ACR SAID HE WAS ALREADY AT FL280. ACCORDING TO TCASII THE NEAREST FLT WAS THE ACR Y AT FL280, AT A DISTANCE OF OVER 15 MI. CTR NEVER INDICATED A PROB. SOLUTION: DON'T EAT IN CLB.
