Narrative:

On initial climb out from mia, we overshot assigned altitude by 500 ft. The altitude alert horn went off at FL355 and we returned promptly to assigned altitude of FL350. We just weren't paying attention and I, the PF, forgot to switch to altitude hold. This model of the B727 does not have altitude capture on the autoplt -- a major safety feature omitted. Supplemental information from acn 481830: cleared to FL350, climbed to FL356 before altitude alerter sounded, the corrected. Captain was PF. (We had a 10 hour 30 min layover the night before, captain did not fall asleep till XA00 -- wake up call at XC00).
