Narrative:

Descending to cross mazat (fossl 6 arrival) at 12000 ft, 250 KTS, ATC cleared us to 8000 ft after mazat. MCP window was set to 8000 ft prior to crossing mazat. Aircraft descended to below 12000 ft and I leveled off at 11500 ft. I started to climb back to 12000 ft when approach control said just to continue to 8000 ft. Discussed with first officer our violation of SOP in not setting the most restrictive altitude in MCP window. I am a brand new captain (first flight after IOE) and have learned from this incident. SOP was violated by my not telling the first officer to put 12000 ft in the MCP altitude window after seeing him set 8000 ft. It won't happen again.
