Narrative:
As a lead mechanic at a line station, I usually situation at a desk and operate the computer. It is my job to assist mechanics that are working on the aircraft. I help to complete the logbook paperwork. Flight xyz called in at approximately XA15 and stated the aft lavatory, sink water would not shut off. I sent a mechanic to investigate, while I looked in the MEL. The MEL says to shut off the water using the under sink shutoff valve. The mechanic did this, but the water kept running. He then shut off the water at the aft galley shutoff. The water quit running. We boarded extra water and towels for the aft lavatory and galley per the MEL. It was now close to the XA30 dispatch time. I had already completed the deferral and sent a new maintenance release to the aircraft via ACARS. I then realized the deferral was for the water shutoff under the sink. (The aircraft was pushing back.) I did an item change for the proper deferral, water shutoff in the galley (so far so good). I sent the new deferral and a new release to the aircraft. (The aircraft was now gone.) then I realized we did not open the circuit breakers for the aft galley coffee makers, per the MEL with water shutoff in the aft galley (although they were turned off). I called ZZZ1. When the aircraft got there they repaired the water problem and cleared the deferral.
