Narrative:

The last segment of my flight plan from dtw to lax was civet intersection, then the civet 4 arrival. My FMC was programmed to reflect this routing. Within a few mi of civet, I was reclred via the mitts arrival and the new runway would be runway 24R. As my first officer hurriedly started the reprogramming of the FMC, I returned the radios for the new runway. At about this time, approach control advised me to reduce speed from 250 KTS to 180 KTS due to proximity to a heavy B747. In my opinion, every attempt should be made by ATC to make routing changes more timely thus giving airmen proper time to reprogram the navigation devices. Supplemental information from acn 595989: we discussed not programming the FMS as we had not been cleared for it and there could be another change. We were then cleared to descend via the mitts one. We were over civet at FL180. The crossing restr on the mitts one at civet is 17000 ft at or below and at or above 14000 ft. We started an immediate descent to make 17000 ft. During the high workload and confusion about the arrs, we deviated from the arrival path on the mitts one, which necessitated ATC intervention to get back on the arrival.
