Narrative:
We noticed the left engine quantity at three quarts with a box around the engine instruments. We sent an ACARS to dispatch and maintenance letting them know what was going on. The captain; as pilot monitoring; reviewed the QRH to look for any low oil quantity procedure but did not find one. While doing that the oil quantity dropped to two quarts and the oil temp began rising and the oil pressure falling. At that time we decided to run the QRH procedure for a precautionary engine shutdown in-flight. After discussing it with dispatch we decided to the nearest suitable airport in time with favorable weather. We configured the aircraft per the procedure and landed without further incident.

Title: A B737-800 flight crew performed an in-flight shutdown of the left engine following receipt of a low quantity warning; rising oil temperature and lowering oil pressure. They consulted with Dispatch and opted to divert to the nearest suitable airport where they landed without incident.
