Narrative:

Both the first officer (first officer) and I updated our ipads per company instruction. They seemed to work fine on the ground. Enroute both ipads froze up as we were preparing to brief our arrival; approach and taxi plans. We worked with the ipads trying hard-reboots and finally resorted to the paper copies of charts in the cockpit. Problem is there is no hard copy of our flight operation manual (fom) or FM. On the ground we were able to get both ipads operable again. We opted to continue. Enroute the same issue recurred. And our ipads could not really be used. Mine was open to the fom and the first officer to the FM as every attempt to change the book (sometimes page) resulted in the ipad's system freezing up and requiring a hard-reboot to be able to use any of the data. Charts we do have onboard; fom/FM we do not. I acquired a loaner ipad in ops and we continued with that ipad used for only fom/FM items. We used paper charts [and will continue to do so] until we get a chance to work with these ipads and are comfortable that they are fully useable (also paper copies of all of our flight planning data).

Title: Captain reported both his and the First Officers iPads were unusable in flight on multiple legs even after several reboots.
