Narrative:
Initial clearance of 'bearr 1 arrival' (landing south, cross bearr at FL150) coincided with the ATIS information that we had already copied from slc. After we had begun our initial descent we were then cleared 'bearr 1 arrival landing north, cross bearr at 17000 ft.' I reached down and revised the FMC to reflect bearr at 17000 ft and the captain left the frequency to obtain the obviously new ATIS. Upon her return, we began our approach/descent flow as we were passing through FL180. I asked for the approach/descent checklist and the captain ran the checklist. When she said 'approach/descent check complete' I then noticed our altitude (16500 ft), altitude alerter (15000 ft) and questioned our clearance of bearr at 17000 ft. She confirmed bearr at 17000 ft and I stopped the descent and climbed back up to 17000 ft. Our altitude bottomed out at 16100 ft.

Title: SLC CHANGES RWYS FROM S TO N WHICH CHANGES BEARR XING ALT FROM 15000 FT TO 17000 FT. THE CAPT (PNF) DID NOT CHANGE THE ALT ALERTER AS PER PROC. THE FO (PF) DSNDED TO 16100 FT BEFORE REALIZING HE WAS SUPPOSED TO LEVEL AT 17000 FT. HE CLBED BACK TO 17000 FT.
