Flight crew of a B737 overshot assigned cruising altitude due to a misunderstanding of the assigned altitude. ARTCC controller intervened and advised of the actual lower altitude assigned and then reclred them to the higher altitude.

Narrative:
ZJX cleared us to climb to a higher altitude. We thought he said FL330. In fact, he stated that he had cleared us to FL310. There was no traffic conflict and we were then cleared to remain at FL330.

Narrative: ZJX CLRED US TO CLB TO A HIGHER ALT. WE THOUGHT HE SAID FL330. IN FACT, HE STATED THAT HE HAD CLRED US TO FL310. THERE WAS NO TFC CONFLICT AND WE WERE THEN CLRED TO REMAIN AT FL330.
