Narrative:
After takeoff for a ferry flight the #1 engine was noticed to have pegged at red line on oil temperature. We immediately decided to return to mco. As the first officer was flying, I began running all the departure as well as the approach checks since we had just taken off. While being vectored back to land, I began to monitor all gauges as well as scan the checklist for an abnormal procedure of this type (there was none). After all checks were done I notified our home base. Meanwhile my first officer was to maintain 3000 ft but he began to drift off altitude as I was doing all the procedures. We then noticed he had descended down to 2700 ft in the TCA and he corrected back to altitude. There was no conflict and we were never informed by ATC of any deviation.
