Narrative:

Inbound to lax descending on the redeye 1 arrival (STAR) the PF, who was receiving IOE in the left seat. Reporter was check airman in right seat as PNF. This flight was only the 4TH leg for PF in his first widebody transport highly automated aircraft. PF selected VNAV for initial descent from cruise altitude, but then selected a different descent mode (flight level change) without making change to altitude portion of the MCP. This caused aircraft to descend below a 10000 ft restr on the STAR momentarily (300 ft) at an airspeed above 250 KTS (270 KTS). PF was not ahead of the aircraft and wasn't watching the flight mode annunciators to see what he had selected. PNF took control and returned aircraft to proper altitude. No known conflicts at this early time in the morning. Not TCASII equipped. PF was experiencing tunnel vision and button pushing on MCP due to lack of experience. Possible fatigue after 5 hour long leg at night, not operating at peak efficiency. On visual approach the PF was again behind the aircraft and when he couldn't program or select the proper modes he deautomated when he couldn't make things work. Inexperience in first automated aircraft was showing and a valuable lesson was learned.

Title: B767-200 DSNDING INTO LAX. ON IOE, FLC DSNDS THROUGH ALT AND DOES NOT CTL AIRSPD. SEVERAL TIMES CHK CAPT HAS TO TAKE CTL OF THE ACFT.

THIS FLT WAS ONLY THE 4TH LEG FOR PF IN HIS FIRST WDB HIGHLY AUTOMATED ACFT. PF SELECTED VNAV FOR INITIAL DSCNT FROM CRUISE ALT, BUT THEN SELECTED A DIFFERENT DSCNT MODE (FLT LEVEL CHANGE) WITHOUT MAKING CHANGE TO ALT PORTION OF THE MCP. THIS CAUSED ACFT TO DSND BELOW A 10000 FT RESTR ON THE STAR MOMENTARILY (300 FT) AT AN AIRSPD ABOVE 250 KTS (270 KTS). PF WAS NOT AHEAD OF THE ACFT AND WASN'T WATCHING THE FLT MODE ANNUNCIATORS TO SEE WHAT HE HAD SELECTED. PNF TOOK CTL AND RETURNED ACFT TO PROPER ALT.
