Narrative:
Informed by catering aircraft was missing 6 food carts due to ferry flight from ewr previously. Conferred with load and dispatch. Informed load was utilizing standard bow versus international bow to compensate for missing carts. Agreed with safe assessment of aircraft. Aft flight attendant informed us of safety issue concerning movement of carts due to open spaces in galley storage areas. Placard also indicates full cart compliment or zero cart compliment. Without consultation gate agent informed us of adding additional carts to compensate for missing carts. My idea was to relocate carts to open spaces in forward galley. Problem seemed to be solved with addition of 2 extra empty carts. I allowed agent to do as such. We were beyond departure time. Upon reflection at cruise I realized additional carts may have nullified standard bow originally planned.
